I know there are a lot of plant-based options available in stores today BUT during the fast, reduce the amount you eat or totally omit it because even though it's plant-based, it's still processed. If your flesh is just as happy on the fast as it is off the fast, it's not being crucified. Stick to whole, living foods to challenge and crucify your flesh even more.
